The Food: Biscuits & (Bacon) Gravy

Good Morning. I have been meaning to write this post all week and just haven’t had the creative drive to get it done. It was a challenging week for me at work. It was a tragic week in my city, Minneapolis. With everything going on, I just couldn’t concentrate on this post.

Then this morning I woke up with lots of creative stuff floating around. SOOOO here comes the next version of The Food.

This recipe didn’t turn out “Great”

I will leave a disclaimer here, this one was not a perfect make by any means. The biscuits didn’t turn out. They were dense and a little mushy. I pretty much “winged it” with the biscuit recipe. Half-fail. Good lesson learned though.

The taste was spot on. Delicious.

The biscuit texture was not great.

Unicorn Blood

I like to try different craft beers. Beer is one of my favorite cooking ingredients.

The other day, as I was window shopping the craft beer selections at the local liquor store, I saw a beer with some crazy artwork on the can. The beer was called Blood of The Unicorn made by Pipeworks Brewery in Chicago.

I checked the ingredients.

Upon seeing there were no Unicorns harmed and it was mostly hops and barley… I decided to give the beer a try.

This Beer Tastes…

This beer is a red ale. It has a big flavor profile. The taste is piney, maybe some fruit and toffee/caramel undertones, very hoppy, and finishes dry and bitter.

Not my favorite type of beer to sip on, but a great flavor profile to cook with!

Kodiak Cakes

My cabinets are getting a little bare right now. I ran out of my biscuit mix. There is a box of Kodiak Cakes Butter Milk Flapjack/Pancake Mix though.

Can I use that to make biscuits?

I tried it. I found a recipe where someone did it in the oven. Didn’t reeeaaaallly read the whole recipe. Just saw that someone had done it before, so I knew it could be done.

I wanted to do it in my Instant Pot though.

No Sausage, sub in Bacon

I also ran out of sausage. However, there was a pack of bacon in my freezer. Being a “B&G connoisseur”, I have used bacon in my biscuits and gravy making adventures before. Turns out good.

The Steps

  1. Chop an onion. Set it aside
  2. Cube-cut about 1 lb of bacon
  3. Turn the Instant Pot on to sautee normal for 30 minutes. Add the bacon when hot. Stir occasionally.
  4. After the bacon is about half cooked, the pot will probably start getting some “burnt on crusties” on the bottom. At this point add the onion. Then start deglazing the pot with the beer. I had to deglaze several times while the bacon was cooking. Dump in a bit of beer, scrape the bottom of the pot, take a sip of the beer. Repeat as needed so the bottom doesn’t burn.
  5. While the bacon is cooking, mix up your biscuit recipe of choice.
  6. When the bacon is finished add a packet of gravy and the water/milk needed, per package instructions. Then add about 1/4 to 1/2 more cup of liquid.
  7. Stir until it boils and then cut the heat off – hit the cancel button on the Instant Pot.
  8. Drop in the Biscuit mix.
  9. Make sure the o-ring is positioned on the lid of the Instant Pot. Put the lid on and seal the pot. Adjust the steam valve to the sealed position. Set the Instant Pot to Pressure Cook Low for about 6 or 7 minutes. Make sure the pot pressurizes.
  10. When the time is up, let the pot slow vent for about 5 minutes. Then release the steam valve. When de-pressurized, open the lid.
  11. Plate and eat!
