Hello my friends! I have a bonus recipe coming at you this morning. My absolute favorite sandwich ever is a Reuben sandwich. I think I went on a year-long thing where everytime I went to a restaraunt I had to order their Reuben.

Over the years, I also developed and am constantly tweaking, my own recipe for a Reuben.

I love Reuben sandwiches so much that I actually planned to use a joke about them in a job interview!

Interviewer: “Tell me what your greatest weakness is”

Me: “The Reuben Sandwich”

  1. Cook the Corned Beef
    1. For this, I had a corned beef that was frozen
    2. I half thawed it
    3. Cooked in Instant Pot – Pressure Cook: High, for 1 hour and 45 minutes. This was a 2.25lbs cut that was half-frozen
  2. After the Pot is allowed to vent, open the top. Add the can of sour kraut and the carrots. Put the top back on and turn vent back to the sealed position. Pressure cook on high for seven more minutes.
  3. When finished cooking, pull out the corned beef. Slice the corned beef. I like to try to slice it thin, but the slice doesn’t change the taste, so don’t worry about too much!
  4. Get a skillet or pan or flat-top – I use my electric griddle or my cast iron “pizza pan” – and butter it very generously. Butter is one of the keys to making a great “grilled” sandwich. Don’t be scurrred, use it! 😉
  5. ***KEY to the sammich! Grill both sides of the bread! I have made HUNDREDS of variations of a Reuben Sandwich using this method (slow cooker in the past before the instant pot). If you do not grill both sides, the sammich will fall apart and get soggy. This step improves both the flavor and the structural integrity of the sammich!
    1. Grill one side then flip and grill the other
    2. Right when you flip it add the swiss cheese to the “just grilled side”
  6. Add a few slices of beef to your pan or flat top.
  7. Add some sour kraut and carrots to the pan around the outside.
  8. Mix up the dressing – 1 part horseradish, to 3 parts thousand island dressing, add about 1 tablespoon of pickle juice and stir together well.
  9. Build the Sammich
  10. Eat that Sammich!
