
Good Morning, my friends. I hope everyone had a great week last week. This week’s post will discuss a favorite weekend activity of mine, cooking on a Sunday morning! Yup, we got a TheFood post this week! I got some goodness cooking in the Instant Pot this morning, and the recipe is below! The post will also include my workout schedule for the upcoming week. To kick off the new week on the positive, this is The Workout of the Week. This is The Cooking on Sunday Morning Workout.

Sunday
If you’re a regular here, you know this Dude loves him some Sundays! If you missed it, check out The Make it a Great Sunday Workout! I typically take part of my Sunday and dedicate it to cooking some food, either for a good meal Sunday, or prep cooking stuff for the week. This Sunday I cleaned a few things out of the fridge and am throwing it into my Instant Pot to see what happens.
Hmm, what to make?
Figuring out what to make is sometimes a problem. Today I dug through the freezer and pulled out a beef shank and a leftover ham bone with some meat on it. In the fridge, I found some tomatoes, carrots, celery, and red bell pepper.
Hmm… I have some buns and I have burrito-sized tortillas.
Oooh – Birria style burrito, or mini tortas. Or maybe some of both! 🙂
Let’s do this!
The Ingredients
- Beef Shank (about 1lbs)
- Ham bone with some meat on it
- 2 carrots
- 2 stalks of celery
- 1 yellow onion
- 4 green onions
- 4 small red tomatoes
- a handful of yellow, red, and orange cherry tomatoes
- 1 12oz can of beer – I used a Sweet Water H.A.Z.Y. IPA
- 1/2 tbsp of garlic powder, chili powder, and beef bouillon
- 1/2 stick of butter
- a few sprigs of rosemary, sage, and thyme
- salt and pepper to taste
The Steps to Cook
- Wash and chop all the veggies
- Put (the mirepoix) carrots, onion, the whites of the green onion, and celery together in a dish. This will go into the pot together, first.
- Put the green parts of the green onion in a dish and set aside to use at the end as a garnish.
- put the tomatoes and bell pepper in a bowl together and set aside for now.
- Sautee the mirepoix veggies in butter on normal heat in the instant pot for 15 minutes. Add salt and pepper and stir occasionally. At 15 minutes, add the tomatoes and bell pepper, and sautee for another 15 minutes.
- Add the beer, beef shank, and ham bone.
- I put ham bone in, then the beef shank. I put a dollop of butter and a few sprigs of rosemary, sage, and thyme on top of the beef shank then submerged all but the top of the beef in the pot.
- After adding, continue to sautee until the pot is bubbling again.
- Pressure cook on the normal, high-pressure setting for 50 minutes. Let the pot slow vent after the cooking time is up.
- Plate and serve!
I turned this into a “mini-torta”. I got some sweet dough buns, toasted them and melted some cheese. Then added avocado, cilantro, mayo, and then added the beef shank meat with veggies from the pot.


On To The Workout Schedule

Daily Stuff
This week I will continue working in the daily warm-up routine I have been doing. I add six days to the count last week. The count is at 53. The new count is 59. The goal is 100 times. #TheDailyWarmUp
My other daily goal is to get around 7,000 steps on most days. I will be either hiking on the trails or getting some steps in around my neighborhood most days this upcoming week. #7kstepsaday

Mon, Wed, Fri
On Monday, Wednesday, and Friday this week I will be doing RBFTBs and Heavy Bag Tabata Burners. 2 rounds of each.
Tue, Thur, Sat
On Tuesday, Thursday, and Saturday, I will be working along with some of my favorite video providers, Global Cycling Network and Yoga With Adriene.
I will be riding along with this Spin Bike workout from GCN.
After the spin bike workout, I will doing this Yoga With Adriene video. I have been doing this year’s 30 Day of Yoga series, and this week I am on the Day 18 video. Last week, in The Yoga Week Workout, I did seven videos in the series, and it was awesome!
