Hello my friends. I am excited to bring a great sandwich recipe today!
This is The Breakfast (for Lunch) Sammy.
This sandwich basically got it’s name because I ate it for lunch today! Quick and easy, not a lot of fluff on this post. Just gettin’ right into it. This sandwhich is sooooo good! I thought the pump/rye “swirly” bread might be wierd, but it was awesome. Anywhooo… on to the FOOOD! 🙂

Here’s What You Need
- Half an avocado
- Two slices of bread – I used some of my pumpernickel rye “swirly bread”; because it’s all I have and it needs to get eaten. Use whatever is available,
- Half a small tomato
- Three slices of bacon
- Two Eggs
- Cheese – I used Swiss
- 1 tablespoon of mayo (optional)
How To Make The Sammy
- Cook the bacon
- fry the eggs – I like my eggs over-easy.
- grill the bread on both side
- I use my cast iron pan. Butter generously!!
- Butter (in my humble opinion) is the key to a GREAT grilled sandwich. Use it!
- Grilling the bread on both sides improves the flavor and the structural integrity of the sandwich. THIS IS KEY! 🙂

- When you flip the bread to grill the second side melt some cheese on the bread. I melt it on both slices.
- Slice the tomato and avocado
- Build the Sammy
- Spread mayo on one side of the bread
- Add the eggs
- Next, add the bacon
- Then the tomato
- Last, Add the avocado
- Maybe add a little S&P or some hot sauce. Or don’t. I like a little garlic powder, black pepper, and a few dashes of Crystal Hot Sauce on this one for my best flavor!
- Top’r off with the second slice of bread
- Optional, cut it in half, take a pretty picture and post it to social media.
