Good Morning, my friends. I hope everyone had a great week last week. To kick off a new week on the positive this is The Workout of the Week. This week’s post will include one of my favorite cold-weather comfort foods and my workout schedule for the week. This is The Chicken Soup Recipe Workout

Back To The Soup

One of my favorite things to make this year is chicken soup with rice. I make it with my instant pot. It is a great comfort food dish! I basically overcook the rice so it comes out like a hearty porridge.
I chop up some carrots, onion, and celery. Then sautee them for about 20 minutes (in the instant pot). Add a little salt and pepper as the veggies cook. Stir occasionally.
After 20 minutes add a cube of vegetable broth bouillon. Add about 1 tsp of garlic powder and one 1tsp of onion powder. Add three chicken thighs. Add about one cup of rice. Add water – I added about 5 cups, to the top fill line of my instant pot. Bring to a boil. Add a bay leaf,
When the water boils, put the lid on the instant pot, seal it, and then switch it over to pressure cook. Set it to pressure cook for 30 minutes on high. Let the instant pot slow vent after it is done cooking. Once the pot has vented, remove the lid and pull out the chicken thigh pieces. Shred the chicken and remove the bones. Stir the chicken back in. Aaand you’re done. Serve it up!




On To The Workout!

This week the workout is much of what I have been doing. With the weather getting colder though, I am writing in days to go down to the gym and use the treadmill or the rower machine if I cannot get outside for a ruck. I will be doing spin bike videos like the one below from GCN. There will be Yoga With Adriene too! If I am lucky, I might even get out for a round of disc golf or two. Of course, I will be listening to positive motivational media, like those mentioned in last week’s post.
