Bonus – The Food!
Banana bread is one of my favorite things.
Making it from scratch is great. However, sometimes I just want to make it the easy way. I like to buy a box mix and “doctor it up”.
Today I got some collagen peptides protein powder that I ordered. It’s chocolate flavored. Normally it’s for my coffee. I decided to make some banana bread today and use some of the protein powder in it!
This gave birth to a new creation – The “C-B-Pb-P Smash Muffin” recipe.
C-Chocolate, B-Banana, Pb-Peanut Butter, P-Protein.
Smash Muffin = I do not own a real muffin tin. I cooked these like cookies, on my cast iron pan. They came out flat, like a smashed muffin.
Semi-Homemade C-B-Pb-P Smash Muffins
- Box of Banana bread mix or banana muffin mix
- 3 eggs
- 1/3 c veg oil
- About 1 1/2 cups of peanut butter. 1 cup mixed into the batter, and about 1/2 cup for later. I use Smuckers Natural PB. It’s made of pretty much just peanuts. Not a bunch of other sugar and added junk.
- About 1/2 cup of chocolate collagen protein powder — I didn’t really measure it. I think I scooped five tables spoons… don’t go crazy, but use enough to get the chocolate flavor
- 3 – over-ripe or frozen(then thawed) banana. Frozen, then thawed bananas are uber-slimy – hahaha.
- Butter to grease the pan with
Step 1 – In a mixing bowl, dump in the dry box banana bread/muffin mix. Mix in the chocolate protein powder. Stir them up until they are incorporate together then make a little well in the middle – I did a poor well job in my video.
Step 2 – Mix in the eggs and veg oil. Fold into the dry ingredients until there is no more power.
Step 3 – Mix in 1 cup of Peanut Butter and the bananas. Mash up the bananas while mixing them in.
Step 4 – Butter your baking sheet. I take a stick of butter, unwrap one half of it, then grab the paper on the other half for a handle. Then apply it a little like car wax! 🙂 Wax-on, Wax-off… or you can write the name of your website in butter too! 🙂
Step 5 – Spoon out the mix like cookies on a baking sheet. I am using my cast iron “pizza pan”
Step 6 – Spoon about 1/2 a tablespoon of PB onto each muffin.
Step 7 – Bake the batch for about 11 minutes, at 400 degrees.
Step 8 – The toothpick test – stick a toothpick in the deepest part of each muffin. If the toothpick comes out clean, THEY DONE. If not, keep cooking. ** oven and cooking times will vary. I usually follow the baking instructions on the box of mix I buy as a general outline and then back it up with the toothpick test.
Step 9 – After the first batch finishes, set aside to cool, butter the pan again, and spoon on the next batch. Then spoon on the PB.
Step 10 – Repeat until the mix is gone. I got 13 smash muffins out of that batch. Two batches of four and one batch of five. It will depend on the size you make them. Cooking time might need to be adjusted per size as well!
